Cullen Skink Pannacotta with Crisp Salad, Saffron Oil and a Parmesan Crisp
“The panacotta was both flavoursome and fresh. The quality of fish used was excellent and the panacotta was of a good consistency. The flavours of the panacotta combined very well with the saffron oil and they complemented each other. The idea of a cullen skink panacotta is quite challenging. It was a very interesting concept and the dish was executed with precision.”
Sticky Toffee Pudding with Vanilla Cream. “Simply presented, yet instantly tempting. The sticky toffee was placed to the centre of the plate, with a quenelle of vanilla cream to the side. Placed on top of the cream, was a sprig of mint and half a strawberry. The pudding was of a good spongy consistency and light in texture.”
